Walt Disney World Resort’s Grand Floridian Resort Celebrates 25 Years

Disney’s Grand Floridian Resort & Spa has long been on of our favorite Disney Resorts.  Partially because it captures the essence of seaside resorts of the Victorian era – a playful blend of nostalgia and modernism.

When the “Grand” first opened its doors 25 years ago today, the opulent resort made a dramatic first impression — a black tie gala with VIPs like Burt Reynolds, Governor Bob Martinez, the late Frank Wells and several of NASA’s original Mercury 7 astronauts in attendance.

Aulani, a Disney Resort & Spa Becomes the First Resort in Hawai‘i to Receives Special Environmental Certification

Aulani, a Disney Resort & Spa has a strong focus on their island culture, which includes a responsibility to preserve and respect their `aina (land). That’s why Disney is proud to announce that Aulani recently became the first resort in Hawai‘i to obtain LEED Silver certification through the U.S. Green Building Council (USGBC) for implementing environmentally friendly construction practices and building systems.

Aulani, a Disney Resort & Spa Becomes the First Resort in Hawai‘i to Obtain LEED Silver Certification

According to the USGBC website, LEED is an internationally recognized green building certification system that provides independent, third-party verification that a building project meets the highest green building and performance measures. To obtain LEED certification, buildings must pass a rigorous checklist of sustainability points that include water efficiency, energy and atmosphere, materials and resources, and awareness and education. LEED certification is also about being stewards of the environment with sensitivity to the impacts on our natural world.

Some of the environmental initiatives in place that allowed Aulani to receive this honor include the use of waste heat for hot water needs. For instance, many people don’t realize that Aulani harvests the heat emitted from the resort’s large chillers – which are used to keep the buildings cool – and diverts it to heat the whirlpool spas and swimming pools. Aulani also provide 34 electric car charging stations for plug-in vehicles within its parking structure.

Even the location of the resort was taken into consideration for LEED certification. Building on an already developed master planned resort location meant that no trees needed to be cleared and no undeveloped lands were disturbed for Aulani.

As Aulani looks toward the future, and looks forward to completing their enhancements in September, Aulani will always keep the environment in mind and look for ways to be even more respectful of the land. It is Aulani’s kuleana (responsibility and privilege).

Walt Disney World’s Victoria & Albert’s Awarded AAA Five-Diamond Award for 14th Consecutive Year

Victoria & Albert’s is again one of the country’s finest places to dine, joining just 53 restaurants nationwide who made the AAA Five Diamond list. But Victoria and Albert’s joins an even more elite group of only 10 restaurants in the United States who can claim the privilege of being named for 14 consecutive years.  With 28,000 restaurants approved by AAA, fewer than one-quarter percent achieve this prestigious distinction of just making the Five Diamond list.

Walt Disney World's Victoria & Albert’s Awarded AAA Five-Diamond Award for 14th Consecutive Year

So we must congratulate Chef Scott Hunnel, Master Pastry Chef Erich Herbitschek, Maître d’Hôtel Israel Perez and their team for earning the coveted award for the gem of a restaurant at Disney’s Grand Floridian Resort & Spa.

“Haute cuisine at its best” defines the AAA criteria. Add cutting-edge menus, the finest ingredients and “food prepared in a manner that’s highly imaginative and unique” and you’ve got the extraordinary combination that defines a winner. But beyond the kitchen, the maître d’ must lead an expert service staff “that exceeds guest expectations by attending to every detail in an effortless and unobtrusive manner.”

Victoria & Albert’s wows guests every single night of the year with a fabulous “Contemporary-American” menu and refined touches such as Italian Sambonet silver, fine Royal Doulton and Wedgwood china, and Italian Frette tablecloths (hung, not folded, to avoid creases). Women get a small stool for handbags and a rose to carry home – and if you’re chilly, they’ll offer a cashmere wrap.

The restaurant offers three dining experiences: the dining room, the elegant Queen Victoria’s Room and the Chef’s Table in the kitchen.

Even Hawiian Residents Love an Aulani Vacation

If you lived in Hawaii, where would you go on vacation?

Many island residents choose the “staycation” route, leaving home to enjoy a few days at one of Hawai`i’s many luxurious resorts. And, according to readers of Honolulu Magazine, Aulani, a Disney Resort & Spa, Ko Olina, is the “Best Hotel for a Staycation.”

according to readers of Honolulu Magazine, Aulani, a Disney Resort & Spa, Ko Olina, is the “Best Hotel for a Staycation.”

It’s a tribute to the family fun and amenities of Aulani: restaurants, Rainbow Reef snorkel lagoon, Laniwai Spa and the many experiences that are included at no additional cost: the pools and slides of Waikolohe Valley, Aunty’s Beach House kids club, and a wide range of live entertainment, including island musical performers and storytellers, visits with Disney characters, and the popular nighttime Starlit Hui.

The “Best” citation appears in the “Best of Honolulu” edition of Honolulu Magazine, designed “to help you live better in Honolulu.” An Aulani vacation – or “staycation” – combines the stories of Hawai`i with the magic of Disney for guests of all ages.

Vintage Walt Disney World: Old Maps of Walt Disney World Resort

In the early years of Walt Disney World Resort , this artwork decorated the guest rooms of the Contemporary Resort Hotel and the Polynesian Village Resort Hotel . The piece showcases the spirit and vast, all-new offerings of the “Vacation Kingdom of the World,” including Magic Kingdom Park , golf courses, beaches, watercraft, monorail transportation, Bay Lake and its eventual Discovery Island, Fort Wilderness and Tri-Circle-D Ranch , STOLport, the Polynesian and Contemporary Resort hotels, and three “future” resorts: the Asian, Venetian, and Persian.

While announced to the public in 1969, the Asian, Persian, and Venetian Resort hotels never materialized. Eventually, Disney’s Grand Floridian Resort & Spa  would open on the site of the Asian Resort, and the sites for the Venetian and Persian Resorts would remain undeveloped. Here’s a look at our property as it’s been developed today.

As Disney legend goes, because so many of the original Walt Disney World Resort maps were printed for guest rooms, a cast member used the excess ones as wrapping paper for Christmas presents one year. A gift wrapped in Disney magic!

Glamorous Camping: Glamping!

Glamping, also known as glamorous camping, has become a recent craze among those of us who prefer easy, stress-free and accessible “camping”. I love that it combines the luxuries of staying in a hotel with everything you love about backwoods camping. It’s the perfect excuse to unplug outside of the city, and is also a fun alternative to your conventional bachelorette party.

Fort Wilderness Campground - Walt Disney World Resort

Walt Disney World Resort offers some great venues when it comes to luxurious camping – the first that comes to mind are the recently renovated Cabins at Disney’s Fort Wilderness Resort. With access to Bay Lake Beach, hiking trails, horseback riding and movies under the stars, you’ll find that glamping is the ultimate upscale retreat. And if the wilderness really isn’t your thing, the Treehouse Villas at Disney’s Saratoga Springs Resort & Spa offer some exceptional amenities with access to the great outdoors.

Details Announced for Expanded Water Fun and Dining Options at Aulani, a Disney Resort & Spa

I told you a few weeks ago about the enhancements coming to Aulani, a Disney Resort & Spa in Ko Olina, Hawai`i. This morning, some additional details about the new water features and two new quick-service restaurants were unveiled by Joe Rohde, Walt Disney Imagineering Senior Vice President, who led the design work on Aulani.

enhancements coming to Aulani, a Disney Resort & Spa

New water features will include a themed family pool, extending literally to the very edge of the resort property and highlighted by a misty grotto from which relaxing swimmers may view the sunset. After dark, a magical starscape of glimmering lights will appear on the grotto ceiling and the floor of the pool.

Near the family pool will be a new kids’ splash zone, designed to resemble tidal pools with some playful surprises for youngsters, including rainbow water jets, images of tidal pool creatures on the pool floors, and hidden Menehune – the legendary little people of the islands – who may be spotted through chinks in the rocks. Additional deck space, chairs, chaises and cabanas will surround these new water features.

Also coming to Aulani will be two new food service locations. One of these, located adjacent to the new water play area, will serve continental breakfast and offer a lunch and dinner menu with a selection of sandwiches, salads and snacks that can be enjoyed in the adjoining outdoor patio, which provides a beautiful ocean view. A second quick-service eatery will be located beachside, offering grab-and-go snacks and easy access for beachgoers.

Work on these enhancements will begin in September and conclude in mid-2013, coinciding with the final build-out of the resort. Along with the water play and dining additions, the expansion will provide a new, larger lawn location for events, weddings and the guest-favorite nighttime Starlit Hui show. There will also be additional merchandise space – to provide guests with a greater variety of Aulani products, apparel and memories – and a protective awning over the patio of  Makahiki restaurant, home of “Aunty’s Breakfast Celebration,” featuring breakfast with Disney characters.

Easy Apple Crisp from Disney’s Grand Californian Hotel & Spa at the Disneyland Resort

Here’s a sweet ending that’s delish year-round. Disneyland Resort Assistant Pastry Chef Nubia Renteria shows how simple it is to pull together an impressive apple crisp that’s on the menu from time to time at Napa Rose at Disney’s Grand California Hotel & Spa. With a crunchy topping of sugar, oats, pecans and coconut with buttery, tart apples and a swirl of Brandy, Chef Nubia tops it with homemade Manchego cheese ice cream. But it’s OK to just to add a scoop of your favorite vanilla ice cream for an easy bowlful of comfort.

Apple Crisp
Serves 6

Apple Filling
1 1/2 pounds crisp apples, such as Fuji or Braeburn
3 tablespoons unsalted butter
3/4 cup sugar
1/4 cup fresh lemon juice
2 tablespoons Calvados (apple brandy)
2 teaspoons cornstarch

Crumble Topping
1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1/2 cup oats
1/4 cup chopped pecans
1/4 cup shredded coconut
3 tablespoons unsalted butter

Manchego Cheese Ice Cream
8 egg yolks
3/4 cup sugar
2 cups heavy cream
3 cups half-and-half
1 vanilla bean, split lengthwise
1/2 pound Manchego cheese, cut into 1 inch cubes

For apple filling:

  1. Peel apples and cut into 1/4-inch dice. Set aside.
  2. Melt butter in a large sauté pan over medium heat; add sugar, and stir about 2 minutes or until sugar melts.
  3. Add diced apples, and cook about 3 minutes or until apples just begin to soften. Combine lemon juice, Calvados, and cornstarch in a small bowl; stir until cornstarch is dissolved.
  4. Add lemon juice mixture to the pan, and cook about 4 minutes, stirring, until juices thicken. Serve warm.

For crumble topping:

  1. Preheat oven to 350˚F.
  2. Combine flour, sugar, brown sugar, oats, pecans, and coconut in a large bowl; stir until well combined. In a microwave-safe bowl, melt butter. Slowly add melted butter to the bowl, stirring to incorporate.
  3. Pour mixture onto an un-greased cookie sheet, breaking up large clumps with your fingers. Bake 10 to 14 minutes, or until golden brown. Set aside to cool slightly; break up any remaining big pieces to achieve a crumbly consistency.

For Manchego cheese ice cream:

  1. Whisk together egg yolks and sugar in a large bowl until pale and fluffy; set aside.
  2. Combine cream, half-and-half, and vanilla bean in a medium saucepan over medium-high heat; bring to a simmer. Slowly ladle 1 cup hot cream mixture into egg yolks, whisking constantly. Pour egg-cream mixture back into the saucepan, and cook about 4 minutes, stirring constantly, until mixture coats the back of a wooden spoon. Pour mixture into a large bowl.
  3. Add cheese cubes and stir. Cool to room temperature, stirring occasionally. Once cooled, pour custard through a fine-mesh sieve into a large bowl. Discard cheese and vanilla bean. Refrigerate custard until cold, then freeze in an ice-cream maker according to manufacturer’s instructions.

To serve:

  1. Spoon apple filling into serving dish and sprinkle with crumble topping.
  2. Serve with a scoop of Manchego cheese ice cream on the side.

Walt Disney World Resort Sends 2011 Out with a Bang

New Years Magic Kingdom

New Year’s Eve is one of the biggest fireworks evenings of the year at Walt Disney World Resort, a place where fireworks are both spectacular and an every-night occurrence. Fireworks and nighttime shows will light up the skies and create a mood of celebration at three theme parks on Dec. 31, 2011, while revelry of other sorts takes place elsewhere throughout the Vacation Kingdom.

Here’s a snapshot of what’s in store:

  • Magic Kingdom presents a double helping of pyrotechnics: “Wishes” nighttime spectacular with a holiday overlay at 8:30 p.m. and “Fantasy in the Sky” at 11:51 p.m.
