Disney Cruise Line Takes Spotlight with Porthole Cruise Magazine Award

We want to share some exciting news about Remy, the French-inspired fine dining restaurant onboard the Disney Dream and Disney Fantasy.

Porthole Cruise Magazine just honored Remy with its 2017 Editor-in-Chief Award for Best Specialty Restaurant. These awards recognize the magazine Editor-in-Chief Bill Panoff’s “favorite travel experiences” that left “amazing impressions in terms of service, quality, and memorable moments.”

Disney Cruise Line is honored that Remy was among his favorite experiences last year!

Remy offers the most luxurious dining onboard Disney Cruise Line ships exclusively for our adult guests and serves the finest French fare. Named after the tiny star and master chef of the Disney•Pixar film “Ratatouille,” Remy transports guests to an authentic fine-dining restaurant in the City of Lights. The elegant dining room is softly lit and designed in a timeless Art Nouveau style with tasteful nods to the film, including artful appearances of Remy.

The gourmet selection was masterfully crafted by Chef Arnaud Lallement of l’Assiette Champenoise—a Michelin 3-star restaurant just outside Reims, France—and Chef Scott Hunnel from award-winning Victoria & Albert’s at Walt Disney World Resort. The menu features decadent offerings such as smoked bison with fennel and blood oranges from Chef Scott Hunnel and langoustines royale (Norway Lobster with Caesar sauce) from Chef Arnaud Lallement.

1. Petites Assiettes de Remy: This culinary journey is offered on embarkation day at Remy to sample small plates of gourmet cuisine and fine wine. It is hosted by the Executive Chef who provides insight into the culinary creations and the Sommelier who presents specially selected wine to pair with each dish.

2. Brunch at Palo: During sea days and select port days, a spectacular Champagne brunch at Palo offers you a sumptuous buffet of international cheeses, fresh pastries, made-to-order entrées, desserts and champagne. It’s the perfect set-up for second (and third!) helpings of incredible cuisine.

3. Brunch at Remy: You can also enjoy an elegant Champagne brunch on sea days and select port days at Remy. The brunch features a decadent six-course French-inspired meal and a selection of Champagnes to perfectly pair with each dish.

4. Snacks at Cove Cafe: Cove Cafe is an exclusive area for adults to enjoy gourmet coffees, specialty drinks and lighter fare cuisine. Muffins, pastries and desserts are offered throughout the day, and a selection of antipasto is served before dinner.

5. Pompidou’s Dessert Experience at Remy: Offered on sea days at Remy, this six-course dessert tasting is hosted by Remy’s Executive Chef. As each course is served, the chef shares fun facts about the dessert, allowing for an intimate and in-depth culinary dialogue.

6. Dinner at Palo: Palo provides an unforgettable dinner experience at sea with a menu of delectable modern Italian cuisine, classic reserve wines and superior service. Palo’s nightly culinary journey starts with both cold and hot antipasti selections, followed by a main course of pasta, seafood or meat, and a sweet indulgence for dessert.

7. Dinner at Remy: With gourmet cuisine by two award-winning chefs, Remy melds classic and contemporary styles for a fine French dining experience. Remy’s Ratatouille Hide & Squeak Announced for Epcot International Food & Wine Festival

Disney has been cooking up something special for Epcot International Food & Wine Festival 2015! Beginning September 25, while supplies last, take part in Remy’s Ratatouille Hide & Squeak and help Remy as he ventures around World Showcase at Epcot collecting ingredients for his signature dish, Ratatouille.

Record your discoveries as you help Remy find each ingredient by placing the corresponding sticker on the specially themed map to represent that location.

Maps and stickers can be purchased for $9.95, plus tax at the following locations in the park. Note: Maps, stickers and surprise available while supplies last. No discounts apply. Purchasing limits may apply.

Whether you choose to search for each ingredient or not, return your map to the redemption location at Port of Entry by November 16, 2015 at Port of Entry to pick up your surprise.

Disney Cruise Line Expands Premium Offerings at Remy

Now, Disney Cruise Line has expanded their collection of offerings at Remy to include a unique tasting opportunity, a decadent dessert experience, a seasonal truffle menu and special caviar selections. Over the next few weeks, we will learn more about these offerings, but today we want to give you details on the brand-new Petites Assiettes de Remy, a progressive tasting experience that is the perfect introduction to this fine dining restaurant.

The Petites Assiettes de Remy experience is designed to provide a taste of Remy, where adult guests travel throughout the restaurant to sample small plates of Remy’s gourmet cuisine and fine wine. It is offered during the early evening hours on the first day of each cruise and is hosted by the Executive Chef who serves as an epicurean guide for this six-course culinary journey.

Throughout the Petites Assiettes experience, Remy’s Sommelier joins the Executive Chef to present specially selected wine that pairs perfectly with each dish.

Following the first course of blinis with Californian caviar and Champagne in Remy’s spectacular wine room, for the next four courses guests move through the main dining room where they are presented with superb French-inspired dishes from the restaurant’s seasonal menu, such as grilled salmon with smoked salmon cream and Kobe beef with turnip and potato gratin.

This unique tasting opportunity concludes with a sophisticated dessert and the final wine pairing in the private Chef’s Table dining room.

Disney Cruise Line Advising Chef Wins Coveted Three Michelin Stars

We have some very exciting Disney Cruise Line news to share with you from Disney Parks Blog. Chef Arnaud Lallement, advising chef to our French-inspired restaurant Remy, was recently awarded a prestigious three Michelin stars for his family-run restaurant L’Assiette Champenoise, near Reims in the Champagne region of France.

Chef Lallement was the only new addition to the highest ranking in this year’s France Michelin Guide, the world’s most esteemed food guide and restaurant-reviewing institution. The guide’s 2014 France edition lists only 27 restaurants with three stars.

Those of you who have sailed on the Disney Dream and Disney Fantasy have hopefully taken advantage of your exclusive chance to taste Chef Lallement’s world-class cuisine at Remy. Chef Lallement creates and implements menus for Remy, Disney Cruise Line’s first ever premier dining option, alongside Victoria & Albert’s Chef Scott Hunnel.

Twice a year, Lallement personally sets sail and steps into the Remy kitchen to develop new menu items and work with the onboard culinary team. Some of his signature dishes include Maine lobster with paprika curry, salmon with coriander jus and sea bass with herbs crème and sweet vermouth. For dessert, he’s created sweet selections like the choux pastry with praline cream and a green apple tarte tatin with salty caramel sauce.

“Ratatouille’ Themed Attraction Set to Open at Disneyland Paris in 2014

When you watch the Disney●Pixar film “Ratatouille,” does it make you want to visit Paris? As early as next year, fans of this film in particular will have a whole new reason to make the trip, as it was just announced that a new attraction based on this film is in the works for Disneyland Paris.

Ratatouille’-Themed Attraction Set to Open at Disneyland Paris in 2014

This new family-focused attraction will open at the resort’s Walt Disney Studios Park in 2014. The film tells the tale of Remy, a cuisine-loving rat, who dreams of becoming a talented French chef. According to Gas, Disneyland Paris is the perfect setting for such an attraction:

“By developing this new ‘Ratatouille’ attraction, we continue to ensure our guests can experience their favorite Disney stories in memorable ways that only Disney can provide,” he said. “The theme, which is very français, is a tribute to the capital and the unforgettable characters that make ‘Ratatouille’ the ideal choice for an attraction that fits perfectly at Disneyland Paris.”

1 whole blueberry
1 mint leaf
1 piece dried apricot
5 oz. Champagne
1 oz. pear-infused vodka

In a Champagne cup, place blueberry and mint leaf. Add Champagne and pear-infused vodka. Finish with a piece of dried apricot.
