Culinary Secrets of Disney Chefs Backstage Adventure at Walt Disney World Resort

Ever wonder how to make a buttery pasta noodle or fork-tender filet mignon? Beginning July 8, the new “Disney Family Culinary Adventure” at Disney’s Contemporary Resort whisks guests backstage for a fun, interactive evening that includes plenty of time with the Disney chefs, hands-on cooking and a festive, five-course dinner with beer and wine served in the kitchen by the professional catering staff.

DCA4645913-600x401

Aimed at guests 9 and older, the evening starts at 5 p.m. with a friendly introduction to the massive catering kitchen. A maximum of 30 guests put on aprons, hats and gloves and are divided into five cooking groups. And every station has a wow technique, from the ease of making homemade butter (equal parts buttermilk and heavy cream) to a fresh pasta with just three ingredients.

DCA4645920-600x403

“We want to show them the tricks of the trade,” says Chef Frank Brough. “It’s a guided experience but they do everything from making cheese and butter to rolling out pasta and breaking down a whole beef tenderloin.”

DCA4645911-600x400

The five stations:

  • Garde manger, is the French term for food produced in the cold kitchen, where guests learn how to make farmer cheese, from-scratch butter, and how to plate a gourmet salad on a rapidly moving electric belt in the professional kitchen.
  • Sushi, with sushi chefs teaching the art of rolling sushi and sashimi. (This station may rotate with other culinary ideas.)
  • Boucherie, or butcher station, where guests learn how to trim a beef tenderloin to make the perfect filet mignon.
  • Pasta, with just three ingredients (semolina, olive oil and egg), guests learn to make tender noodles from scratch, along with fresh basil pesto.
  • Patisserie, or bakery, where guests get to play with chocolate, mousse and other sweet endings.

Once the food prep is complete, guests move freely about the big kitchen to chat with the chefs – no culinary question goes unanswered. It takes about an hour for all the prep work, then everyone is seated at a long table in the center of the kitchen to enjoy the five-course meal they’ve just prepared. (Vegetarian, vegan and selections for guests with allergies are options for dinner.)

DCAL4645924-613x409

Lights are dimmed, background music plays, and a toast begins the special meal, where each course is served with wine and beer. At the meal’s end a special molecular gastronomy demonstration wows guests (we’ll keep that a secret), and they receive a special toque (chef’s hat) to take home, along with a Disney cookbook signed by the chefs.

“We really want them to leave the kitchen with ideas for a spectacular dinner party that they can do at home without opening a can or reaching for something frozen,” says Chef Brough.

The program is planned two evenings a week (days vary), starting at 5 p.m. Cost is $175 plus tax, $125 plus tax for ages 9 to 12. (Younger guests may have their own cooking station.) Complimentary transportation is provided for Disney Resort hotel guests.

Chef Mickey’s Opens for Brunch Starting May 31 at Disney’s Contemporary Resort

Reservations open May 22 for what promises to be a popular new addition to Walt Disney World Resort dining – mid-day brunch daily at Chef Mickey’s at Disney’s Contemporary Resort.

CHB535414-613x345

The popular restaurant, with the Monorail breezing by overhead, has been open for breakfast and dinner, and is one of the very best spots for an audience with Chef Mickey and his pals, who make a stop at each table during dining service.

For brunch, the menu of breakfast favorites expands with soup; salads including Caesar; seafood, fresh broccoli, antipasto, chicken and Caprese, and hot dishes such as barbecued ribs, seafood étouffée and baked salmon. (And, yes, the famous Mickey waffles are on the brunch menu.) The ice cream bar and Contemporary bakery sweets also will be part of the expansive buffet.

Hours for brunch are 11:30 a.m.-2:30 p.m. (Breakfast is still 7-11:30 a.m. and dinner 5-9:30 p.m.) Meals are one table-service entitlement on the Disney Dining Plan. For reservations, contact you Kingdom Magic Travel Planner today!

Wilderness Lodge Rejoins AAA List of 4-Diamond Hotels

Walt Disney World‘s Wilderness Lodge has rejoined AAA’s prestigious four-diamond list, one of only seven Florida properties to be added to the list this year.

Walt Disney World Resort's Wilderness Lodge

The hotel, inspired by turn-of-the-century national park lodges, is known for its log-cabin theme and Pacific Northwest décor. It was first named a four-diamond hotel in 1996. AAA could not say Monday when the hotel fell off the list.

It joins 33 others in Central Florida that are already on the AAA four-diamond list, which includes properties ranging from the Ritz-Carlton at Grande Lakes to the Hard Rock Hotel at Universal Orlando.

Auto Club AAA, based in Heathrow, has been rating hotels with one to five diamonds since the 1960s. The four-diamond rating is the organization’s second highest, given to 5.3 percent of the more than 29,000 hotels approved by AAA.

Five diamonds — the upper echelon of AAA’s rating system — is even harder to come by, given to just 0.4 percent of hotels reviewed by AAA.

Walt Disney World Resort's Wilderness Lodge

“Four- and five-diamond hotels and restaurants provide guests with a luxurious experience that tailors to their every need,” said Mark Jenkins, a AAA spokesman. “These establishments consistently exceed the expectations of the most discriminating traveler — the AAA inspector.”

Disney said its Wilderness Lodge was refurbished in 2012. Guest rooms got new fabrics, paint and carpeting, and Disney added character accents in the rooms. The main areas and corridors also were renovated.

“As with our parks, our resort hotels are about exceeding guests’ expectations, and we’re very pleased with this designation,” said Rick Sylvain, a Disney spokesman.

For yet another year, the Orlando area left empty-handed when it came to five-diamond hotels, but that could change soon with the opening of the Four Seasons Hotel at Walt Disney World Resort. The hotel, which is scheduled to open Aug. 3, will likely be a candidate for the premier rating.

Walt Disney World Resort's Wilderness Lodge

Orlando residents can still get five-diamond service locally, but they’ll have to seek it at a restaurant. Victoria & Albert’s, a fine-dining restaurant in Disney’s Grand Floridian Resort & Spa, has been rated five diamonds for more than a decade.

4-Diamond Hotels

Central Florida’s four-diamond hotels (with year they got the designation):

Disney’s Animal Kingdom Lodge-Jambo House (2011)

Disney’s Animal Kingdom Villas Kidani Village (2011)

Disney’s Beach Club Resort (2003)

Disney’s BoardWalk Inn (2009)

Disney’s Contemporary Resort (2007)

Disney’s Grand Floridian Resort & Spa (1989)

Disney’s Polynesian Resort (2007)

Crazy for Cupcakes from Disney’s Contemporary Resort

Pastry Chef Jeff Barnes at Disney’s Contemporary Resort makes a mean red velvet cupcake, cream cheese frosting piled high. But the real secret to the perfect cupcake is the tunnel of icing he creates inside the cake.

Take a look as Chef Barnes shows us his secrets to a perfect red velvet cupcake – sorry, no recipe with this one, but you can re-create his techniques for a fancy cupcake at home. We shot this demo at one of the beautiful new homes at Golden Oak at Walt Disney World Resort, with custom, whole-ownership homes priced from $1.5 million.

California Grill at Disney’s Contemporary Resort Gets Ready for a New Look

We recently caught up with  Chef Brian Piasecki from California Grill at Disney’s Contemporary Resort to talk about upcoming plans for one of our favorite Walt Disney World Resort restaurants.

California Grill Chef Brian Piasecki

Chef Brian, when will California Grill temporarily close?
Chef Brian: We’ll close on January 6, 2013, and we’re all so excited about the new look – I can’t wait to share the plans!

And when do you plan to reopen?
Chef Brian: Late summer 2013.

Are you making big changes to the menu?
Chef Brian: We’ll be tweaking the menu, but we’ll still focus on a fresh, seasonal menu with top-of-the-line sushi. You can still look for creative flavors and techniques, and sophisticated cuisine – I’ve got a great group of chefs in my kitchen and a great crew in the dining room, and we all plan to return.

We heard the private dining rooms may go away?
Chef Brian: No, we’ll continue to use the two private dining rooms for personalized catering for groups and parties.

Are you getting a new onstage kitchen?
Chef Brian: We’re so excited about enhancements to the interactive kitchen – we’ll be able to give a fresh spin to California Grill classics, and add some cutting-edge new selections to the menu.

Stay tuned for updates!
